At the heart of the Picnic Sandwich Atelier trio is the Atelier: a workshop of flavors, techniques, and a cooking culture that celebrates diversity in taste and the joy of making things by hand.
We use Nuvola Caputo flour from a historic mill in Naples that’s been making flour since 1924. The soft wheat, free of additives and created with the natural fermentation of grain in mind, is perfect for achieving that airy, crisp, beautifully bubbled crust. We don’t add anything extra. We don’t knead or overwork it; we stretch it, we give it time and warmth, we let it breathe. The result is a dough shaped by patience, not machines—three rises, 50% hydration, and a whole lot of intention. Our olive oil—grassy, floral, full of character—is essential for a dough with depth, a soft, tender center, and a crust that’s crisp, lightly toasted, and rich with flavor.
When it comes to meat, we take the same slow, careful approach. We cook everything sous vide, letting time work its quiet magic. Each type of meat gets its own spice blend—thought out, tested, and tuned just for its personality—then left to marinate for hours until the flavors sink in deep. The long, low sous vide bath brings all those layers of taste to life.
